1847 STONE MILLING Organic Unbleached Red Fife Flour, 2.5kg

$25.00   $25.00

Red Fife is Canada’s oldest known wheat variety, introduced in the 1800s and known for its rich flavour and historical significance. This organic Red Fife Flour from 1847 Stone Milling is stone milled weekly in small batches from 100% Canadian-grown red fife wheat berries, preserving the full nutritional value and unique taste of this heritage grain.

Red Fife (Triticum aestivum) is a hard spring wheat known for its smooth, creamy texture and subtle notes of stone fruit and toasted nut. With a protein content of approximately 10%, it produces an airy crumb and golden crust in bread, while offering a robust flavour that elevates muffins, pancakes, and pastries.

Unlike conventional flours, 1847 Red Fife Flour is never bleached, bromated, or fortified. It’s cold-milled with its full bran and germ intact, ensuring every bag is rich in natural fibre, nutrients, and deep, wheaty aroma.

Recommended Uses:

  • Breads and sourdough

  • Muffins, cookies, and pancakes

  • Rustic loaves and heritage grain blends

  • Substitution for all-purpose or whole wheat flour

Flour Characteristics:

  • Colour: Sourdough

  • Body: Smooth and creamy

  • Protein: ~10%

Why Choose 1847 Stone Milling:

  • Milled fresh weekly in Ontario
